Story Intro
Mrs. Ngoc is a prized female Robusta coffee producer  of Mori Farm, nestled in Vietnam’s Central Highlands near Pleiku in Gia Lai province.  
 
Her coffees are handcrafted with a level of care typically reserved for specialty Arabica—yet they celebrate the boldness of Robusta. As Ngọc describes it, her beans are “fruity, flowery… strong, but in a gentle way,”
 
A lot from Mori Farm placed second in the Robusta category of the 2021 Vietnam Amazing Cup.  
 
At River Phin Coffee we worked with Mrs. Ngoc to bring her  Dark Honey processed lot to the USA audience.  The Dark Honey recently recognized at the Vietnam Amazing Cup, redefines what Vietnamese Robusta.  We roasted it a medium-dark roast profile that's good as an espresso, phin w/condensed milk, or straight black.
 
How's Process
Dark honey process.  The mucilage is left on 75–100% and slow dry on raised beds.  During drying the mucilage ferments naturally, intensifying sugars.
