Story Intro

The producer of this pink bourbon coffee is Alexander Vargas.  He's a well-known name in the municipality of Palestina, specifically in the Los Olivos village.  Alexander has been a national finalist in the Cup of Excellence on four occasions, a testament to the quality of his coffee.

 

The Process 

This coffee is fermented in an anaerobic environment for 36 hours. It is then washed and placed on raised beds to dry for 15 days. At La Piragua Coffee farm, the producer Alexander has implemented variations of the washed process, all with meticulous care at every stage of the process.
